Blackjack is the cheapest game on the floor by a wide margin, and it is the only family where playing well changes the number. Everywhere else the odds are fixed the moment you choose your bet.
Most of Evolution’s blackjack tables run the same rules: eight decks, the dealer stands on all 17s, you can double after splitting, you cannot re-split, and blackjack pays 3 to 2. Play those correctly and the house keeps about 0.59 percent of what you bet, which is better than you will find at most live blackjack tables online. What changes from table to table is the minimum bet, how many seats there are, and whether the game charges you extra for a bonus feature.

Two are worth a closer look. Lightning Blackjack doubles your stake: you put up twice your bet every hand, and the extra half is what pays for the multipliers when they land. And Easy Blackjack returns 97.23 percent, well below every other table here, because you are not playing hands at all, you are betting on which totals will come up. It is comfortably the worst value of the eleven.
Every Evolution roulette game is single-zero European roulette underneath: one green pocket, 37 in total, 36 units paid on a winning number. That works out to a 2.70 percent house edge on red or black, odds or evens, and every other outside bet, on every table below, whatever the game is called. What the branded tables add is a multiplier on single-number bets, and they pay for it by cutting what those bets return. On Lightning Roulette a non-multiplied straight-up bet pays 29 to 1 instead of the standard 35 to 1. Bet red or black and you never touch the multipliers; bet straight up and you have traded a slice of every win for the chance of a rare large one.

Game shows are presenter-led wheel and ball games with bonus rounds, and Evolution invented the format. There is no single house edge for them, because what you get back depends entirely on which segments you cover. Standard eight-deck baccarat is one of the best bets in any casino: about 1.06 percent on banker after the 5 percent commission and 1.24 percent on player. The tie, paying 8 to 1, costs about 14.36 percent, and the table will keep offering it to you all night. Evolution’s versions mostly swap a little of those good odds for the chance of a much bigger win, and they charge a commission on every bet to pay for it. None of these is poker in the usual sense. You are not playing other people, so there is no bluffing and nobody to read: the dealer plays a fixed hand for the house and the hand rankings are just a payout chart. The odds vary far more than they do across the blackjack tables, from a little over 2 percent to more than 5, and the side bets attached to them cost more than the games themselves. The figures below assume the standard payouts, and casinos are allowed to run shorter ones, so it is worth a look at the paytable before you sit down.
